Celeriac ‘Brilliant’ is a superb winter vegetable, producing smooth round roots with white flesh that doesn’t discolour when cooked and has a rich tangy celery flavour. It’s delicious roasted, mashed or added to winter soups and stews. Celeriac can be left in the ground over winter and harvested as required.
Sow indoors
March: Sow thinly 0.5cm (1⁄4in) deep in clean trays or modules of firm pre-watered compost. Keep soil moist at all times.
Plant out
May-June: Plant out into the required harvest position 30cm (12in) apart with 30cm (12in) between each row.
Tips
If overwintering in the ground, cover with straw or compost to protect from frost. Keep well watered during dry spells. Celeriac does best under moist conditions.
